Banana Nice Cream

This recipe is bomb…dot…com (my kids are cringing right now LOL). Yes there are few recipes in this house that my kids constantly ask for and this is one. I always keep a bag of frozen ripe bananas in the freezer for just such an occasion. The best part is that they think they are getting ice cream and it’s really just bananas. Thank you frozen banana geniuses! I did not invent this method but I have customized a variety of flavors by trial and error. You could add a scoop of cacao powder for chocolate flavor, frozen berries with granola for a berry crumble, frozen pineapple for a tropical flair, or cacao nibs for chocolate chip effect. My favorite optional add-in is a spin on Ben and Jerry’s Cherries Garcia (chocolate chips and cherries), featured here. The sky is the limit!
 
Here are the basic ingredients:
 
Banana Nice Cream
Serves 3
 
3 Peeled bananas, frozen
2 Tbsp almond milk (or other nut milk)
1 tsp vanilla extract
Pinch of salt
 
Optional:
1 cup frozen cherries
Cacao nibs for sprinkling
 
Instructions: Add all four ingredients to a high speed blender (I used a Vitamix) and blend until you think it’s not going to come together and just keep blending. Then suddenly it will mix together like soft serve! Oh Yeah. Enjoy!
 
Optional Chocolate Cherry: Add 1 cup frozen cherries and blend until just chunked up in the nice cream but not blended. Place in a bowl and top with cacao nibs. Woot woot!
 

Again have fun with the options and enjoy the natural sugar ice cream.
